Foodie Friday:: Melt in the Mouth Chocolate Valentine Pud

With Valentines Day just around the corner (next Wednesday, for those who need the reminder), we thought we would share a delicious indulgent recipe for Melt in the Mouth Chocolate Puddings - a perfect way to finish a home cooked Valentines Meal.

INGREDIENTS

  • 50g chocolate,

  • 50g unsalted butter

  • 1 egg

  • 1 egg yolk

  • 60g caster sugar

  • 2 tablespoons cocoa powder

  • 50g plain flour

  1. Heat oven to 180 C / Gas 4.

  2. Melt the chocolate with the butter in a bowl over a saucepan of hot water. Take off the heat and leave to cool.

  3. Whisk the egg, egg yolk and sugar until well mixed - an electric mixer works well, otherwise, plenty of elbow grease

  4. Butter 2 ramekins. Dust well with the cocoa powder, then shake off any excess.

  5. Whisk the cooled chocolate mixture into the eggs and sugar mixture.

  6. Sift the flour over the mixture, then fold in. Divide between the 2 ramekins.

  7. Bake for 15 minutes in the preheated oven.

  8. Run a knife around the edge of each pudding and turn out onto plates. Decorate with sprinkle of icing sugar, some fresh raspberries and a dollop of best Devonshire Clotted Cream for a truly indulgent treat.

When they first come out of the oven, the puddings will still look a bit wet on the top and be a bit wobbly. There will be quite a bit of the melted part in the middle, but if you prefer something a bit more solid, add another couple of minutes to the cooking time.
