Foodie Friday: ANZAC Biscuits

Last Wednesday was Anzac Day - the day on which, every year Australia and New Zealand honour members of the Australian and New Zealand Army Corps (Anzac) who lost their lives in foreign conflicts.

Originally started to mark the anniversary of Anzac troops entering the battle at Gallipoli in the First World War, the scope of this national day of remembrance has since been broadened out of respect for those killed during the Second World War and on subsequent peacekeeping missions around the globe.

Obviously we couldn't let this go unmarked in the OvenCleaning Man house, so we had to bake some Anzac biscuits. These were a treat, made by the women left at home for the troops serving on the frontline during the war. Now they make a delicious treat to have with a cuppa at the end of a long day of cleaning ovens/ school/ work.

INGREDIENTS

  • 85g porridge oats

  • 85g desiccated coconut

  • 100g plain flour

  • 100g caster sugar

  • 100g butter

, plus extra butter for greasing

  • 1 tbsp golden syrup

  • 1 tsp bicarbonate of soda

METHOD

1. Heat the oven to 180C. Put the oats, coconut, flour and sugar in a bowl.

2. Melt the butter in a saucepan and stir in the golden syrup. Add the bicarb to 2 tablespoons of boiling water, then stir into the syrup/butter mixture.

3. Pour this mixture into the dry ingredients and stir until well mixed.

4. Put dessertspoonfuls of the mixture onto the pregreased baking tray, leaving about 2.5cm to allow for spreading. Bake for 8-10 minutes until golden. Allow to cool.
